意大利、一个让我从学葡萄酒的人变成真正喝葡萄酒的人的地方。美食与美酒总是不分你我、如影随形。从我家餐桌上的常客开始讲起,分享我的意式美酒与美食之旅!

Italy is a place where I transformed from a wine student to a true wine drinker. Food and wine are always inseparable, like peas and carrots. I will start with the regulars on my dining table at home and then share my Italian wine and food journey with you!

        家族酒庄是一种传承。每一个家族都会有自己的风格和印记。从1906年至今,Recchia家族同他们的土地一样、一直有着酿造葡萄酒的使命感。 “脚踩大地,仰望天空,心系葡萄园,头脑中清晰刻画着想要酿成葡萄酒的样子。” 在逾百年的历史里、酿酒在他们的血液中脉脉相传。新一代庄主Riccardo-Guido, Chiara, Enrico, Roberto, Elisa和Luca Recchia继承老一辈对酿酒的热情、但他们又在此基础上对酒庄进行了扩建和改良。

A family winery is a legacy. Every family has its own style and imprint. From 1906 to today, the Recchia families have always made wine a vocation, their calling endured just like their land. With your feet on the ground and looking up to the sky, the heart to the vineyard and the head to the wine, that is how it will always be. For over a hundred years, wine making has been in their blood. Riccardo-Guido, Chiara, Enrico, Roberto, Elisa and Luca Recchia are the latest generation, they have the same passion for wine as their grandparents but have drawn on their roots to improve their product.

       提及我与Recchia酒庄的缘分、不得不从我最爱的餐厅Trattoria dalla Bice讲起。这个坐落在Valpolicella Classico中心的Negrar村庄的餐馆,将“当地酒搭配当地菜”的传统发挥到淋漓极致。坐落于红葡萄酒产区,这里的菜单包含着各种与其相得益彰的特色红肉菜。我们是这家餐厅的常客。一些不想花太大筹码却想要好好犒劳自己的日子、我们会点Il vino della casa, 餐馆都有的入门款酒。新鲜的黑樱桃和草莓的味道让这款葡萄酒格外的清新易饮。于是向餐馆老板询问这款酒的出处。热情的老板同时还向我们分享了酒庄的名片。得知这款酒便是来自Recchia的Corvina。他们家有着3L bag-in-box的包装,同款的白葡萄酒可以直接放入冰箱来冷藏,十分便利。之后我们便去拜访酒庄,为家中的存货添砖加瓦。每一次去Recchia我们都满载而归。合适的价位让葡萄酒消费降到可以接受的水平。

My story with Recchia starts at my favourite restaurant: Trattoria dalla Bice. This restaurant sits in the village of Negrar, in the heart of the Valpolicella Classico, it is the perfect place to pair local wines with local dishes. Located in the red wine region, the menu features a variety of specialty red meat dishes that complement each other. My partner and I are frequent visitors of this restaurant. Some days when we don’t feel like spending too much money, yet we want to treat ourselves, we will order the house wine; the entry level wine that is normally found on the restaurant’s wine list. The fresh black cherry and strawberry notes and flavors make this wine exceptionally fresh and easy to drink. Thus, we asked the restaurant owner about the source of this wine. The enthusiastic owner who has since become a good friend of ours also gave us the winery business card. We learned that this wine is Corvina from Recchia, they pack their wine in 3L bag-in-box packaging, and the white wine in this kind of the box can be placed directly in the refrigerator to cool for the ideal drinking temperature, which is very convenient. Eventually we went to visit the winery itself to add to the our wine inventory at home. Each time we go to Recchia, we come back loaded with wine. The genuine quality and price ratio makes our wine bill acceptable and well worth it.

悠闲的周末,烹制一份营养美味的午餐。海鲜意面是我们大爱的一个选择。来自Recchia酒庄的Custoza葡萄酒同海鲜意面搭配再好不过。Custoza是一款年轻、清爽宜人、美味可口的葡萄酒,有着水果风味及清淡花香。Custoza是Recchia在加尔达湖沿岸名为Poderi del Roccolo葡萄园出产的干白。冰川的起源使得这里有着相对多的沙子和石头。非常简单干净的一款酒。由40% Trebbiano, 40% Garganega和20% Chardonnay混酿。适宜的酒精度和怡人的新鲜感,让这款酒可以在生活中的各种场合中饮用。

We always prepare a nutritious lunch on a leisurely weekend. Seafood pasta is an option we adore, the Custoza wines from Recchia are a perfect match to this dish. Custoza, is a young, refreshing and delicious wine that has fruity and floral notes. Very simple and clean on the palate. Custoza is the dry white of Recchia’s vineyard called Poderi del Roccolo on the shores of Lake Garda. Its soils are of glacial origin with a good amount of sand and stone; the wine is a blend of 40% Trebbiano, 40% Garganega and 20% Chardonnay. They are simple structured and well-balanced wines and present a moderate alcoholic content with a pleasant freshness, for this reason, they can be enjoyed in every occasion.

中秋夜,我们用Recchia的Valpolicella Classico来搭配鲜嫩的小牛排。桌上一颗由中国友人不远万里带来的月饼承载着着那一丝剪不断理还乱的乡愁。Valpolicella Classico是一款拥有着清新的果香和花香、有着樱桃、黑莓和地中海香料的味道。一款基础款的红酒同肉质细腻的小牛肉不得不说是刚刚好!

On the Mid-Autumn Festival night, we used Recchia’s Valpolicella Classico to match the fried tender veal chops. The mooncake on the table was brought to us by a dear friend all the way from China – this gave my heart a tinge of homesickness on this special day. The wine tasted of cherries, blackberries and Mediterranean spices, it is an uncomplicated wine that paired perfectly with the fleshy veal, it was just right!

        去Trattoria dalla Bice的时候,还是会点Recchia的酒。今年27岁生日的时候点了一瓶 “Cà Bertoldi” Amarone della Valpolicella DOC Classico,这款酒由55%的Corvina Veronese,25%的Corvinone和20%的Rondinella混酿而成。在十月的中上旬手工采摘、保存到冬季、直至失去其原始重量的35-40%;在一月份,将葡萄除梗并进行柔和的压榨。在温控至5-20度的不锈钢罐中浸渍10-15天。这种传统的方法的发酵、一般会持续20-25天。接下来会在不锈钢罐中存储6个月,之后移至法国橡木桶中陈酿48个月。酒体丰满、有着馥郁的果香和一丝香料气息,让您不禁想起樱桃利口酒的味道。饱满的酒体与圆润的口感达到了完美的平衡。

When we go to Trattoria dalla Bice, we still order Recchia. On my 27th birthday this year, we ordered a bottle of “Cà Bertoldi” Amarone della Valpolicella DOC Classico, which is a blend of 55% Corvina Veronese, 25% Corvinone and 20% Rondinella. The grapes for this wine were hand picked in the first half of October and stored in the winter until it lost 35-40% of its original weight; in January, the grapes were de-stalked and gently pressed. Immersed in a stainless steel tank controlled to a temperature of 5-20 degrees for 10-15 days. Fermentation is a traditional method that generally lasts for 20-25 days. It has been aged for 6 months in stainless steel tanks and aged for 48 months in French oak barrels. It has a rich body, a fruity aroma and a hint of spice, reminiscent of tasting cherry liqueur. The full body and the rounded mouth feel are perfectly balanced.

1° Premio al Palio del Recioto

        当今、各类葡萄酒比赛遍地开花。眼花缭乱之余、静思:哪些又是真正有水准的胜利呢?不得不说,如果能够在原产地、与所有生产同类的葡萄酒酒庄的竞争中取得胜利、不得不说这一仗打得真心漂亮。最懂葡萄酒的评委就要属当地人了。葡萄酒文化在意大利源远流长,当地的人们对在自己领土上生长的葡萄酒有格外的自豪感。意大利本地人日常餐桌上的酒一定是购买自于当地的酒庄。旧时人们用Damigiana去酒庄打酒(是不是同小时候咱们去小卖铺打酱油有异曲同工之妙呀),现在人会购买利乐包装等更现代 (更懒惰)的葡萄酒作为家中常饮。在Valpolicella当地的Palio del Recioto比赛中,来自Recchia的Recioto夺得头筹。Recchia将奖状放在酒庄直销厅最为显眼的地方,其喜悦之情自然溢于言表。

Today, there are all kinds of wine competitions blooming everywhere. So, what can a winery consider to be true victory? I have to say that if you can win in the competition of origin and against all the wineries that produce the same kind of wine, you would have to concede that you have achieved true victory. The judges who know the most about wine must be locals. Wine culture has a long history in Italy, and local people have a special sense of pride in the wines that are developed and produced in their territory. Italian local table wines must be purchased from local wineries, in fact, in the old days, people used Damigiana containers to go to the winery to buy wine. Recioto from Recchia won the first prize in the local Palio del Recioto competition in Valpolicella this year, they put the award in the most conspicuous place  –  on the winery’s cellar door, where happiness is in the air.
